When I was growing up I used to spend a lot of my time across the street with my neighbors. Two girls, one a  year or so older then me and a year or so younger then me. We made a very fun trio. They had a delicious recipe which I always enjoyed and still make myself to this day.
I believe it was a family recipe, and is most certainly a breakfast of sorts. I found a very small reference online that “Egg Kaka means Swedish Pancake” and then I found this which is helpful. It’s not really a cake, so Pancake seems more acurate. Its delicious and I always eat it with fresh lemon and powdered sugar which compliment it perfectly.
When it cooks, it bubbles up in a delightful way for children to watch. You know its ready when some of the bubbles are starting to brown. When you remove it from the oven all the bubbles deflate from the lack of heat and it’s quiet funny to watch.
Ingredients
2 Cups Milk
1 Cup flour
1/4 tbsp. butter
1/2 to 1/4 cup sugar
3 Eggs
1 tsp. salt
Optional
Squirt of Lemon Juice
Powdered Sugar
Preheat oven to 450 degrees. Melt butter and put into 9×13 inch pan. Mix the rest of the ingredients in a blender and mix until all blended together. Put in 9×13 inch pan with the butter. Cook for approx. 20 minutes. Sprinkle Lemon and Powdererd Sugar
Just placed into the oven.
Ready to come out of the oven! A little brown, and all funny looking!
After it’s been removed form the oven and all the “bubbles” deflated!
